5 Recipes: To Keep Body Cool

Chicken Salad with Green Beans, Nectarines, and Walnuts

July is a month of swimming, vacations, and keeping cool in the summer’s heat. How many days have you wondered what to make for dinner when the weatherman forecasts humidity and temperatures that make your think of Easy Recipes For Diabetic?

For most people who are not on special diets, what they eat on one hot night has little consequence, but for those with diabetes, we know that a meal of just ice cold watermelon or sugar free ice cream can play havoc without medication, to our moods, and blood glucose levels.

1. Salad Salmon-Thai Style

Our first meal is a salmon salad with a Thai twist. You can substitute shrimp, crabmeat, lobster or any firm fish for the salmon. When we make this salad we always try to make extra because it is wonderful the next day. For dessert, why not cut open a fragrant pineapple and serve it on ice?

2. Chicken Salad with Green Beans, Nectarines, and Walnuts

Our next recipe takes less than a half an hour to make. What can be better on a busy hot evening? Buy cooked chicken at the market. Skin it and chop. Or, poach a chicken breast in the microwave for a few minutes until cooked through.

Another time, buy cooked shrimp at the market and substitute them for the chicken. If nectarines don’t look good, use cantaloupe, plums, apricots, or peaches. Serve fresh from the field corn on the cob with the chicken salad and add some frozen sorbet for dessert. You have an easy, delicious meal in minutes.

3. Chicken and Papaya Salad with Creamy Herb Dressing

Our third meal also features chicken, this time with tropical fruits. To save time, you could purchase already cooked chicken from your market service deli, but we opted to roast our chicken early in the morning when the oven wouldn’t heat up the kitchen.

Serve this luscious whole meal salad with glasses of iced tea and some crusty rolls. Dessert can wait until time for your evening snack. We suggest a small scoop of sugar-free, fat-free frozen yogurt or ice cream.

4. Asian Red Noodle Salad

Keep our final meal in mind when you literally have less than 20 minutes to get supper on the table. We like to make our own pasta (done earlier in the day), but you can purchase fresh pasta from your market or pasta sheets cut to order from your favorite Italian deli with equally good results.

If you buy the pasta, following the manufacturer’s cooking instructions. Serve slices of fresh mango sprinkle with a bit of lime juice for a quick, luscious dessert.
