Cantaloupe Granita – Per serving: 69 calories (0% calories from fat), 1 g protein, 0 total fat (0 saturated fat), 17 g carbohydrates, 1 g dietary fiber, 0 cholesterol, 33 mg sodium
1/4 cup (60 ml) fresh lemon juice
Seed and peel the melons and cut into chunks. Whirl enough of the fruit in a food processor fitted with a metal blade or in a blender to make 3 cups. Add the lime or lemon juice. Pour into a shallow metal pan and freeze.
Allow to sit at room temperature until you can break it up with a wooden spoon. Transfer to a bowl and beat until slushy. Cover and refreeze.
To serve, soften at room temperature for 5 minutes and scoop into dessert cups or glasses.
